Moringa or "Drumstick" Dal (Shevga Dal)
This is a typical Maharashtrian recipe from my family. One of the trees which I saw growing in our backyard in Mumbai since childhood was Moringa or Shevga. Now, the same tree is 4 stories tall and still after 40 years giving the fruits which are pods or beans. The vegetable from Moringa leaves and soup made with dal and Moringa’s pods are still one of the favorite dishes in our household. You can find Drumsticks or Moringa pods in oriental and Indian grocery stores.

Ingredients
- 3 Medium Length Moringa Pods or Beans or Drumsticks (Shevga)
- 1 Cup Toor Dal (Split Pigeon Pea)
- 4 Teaspoons Ghee
- 2 Garlic Cloves (Chopped)
- 1 Teaspoon Mustard Seeds
- 5 Curry Leaves (Optional)
- ¾ Teaspoon Turmeric
- ¼ Teaspoon Hing Powder
- 1 Small Boiled Potato (Cubed)
- 1 Small Tomatoes (Cubed)
- ¼ Cup Onion (Finely Chopped)
- Freshly Chopped Cilantro
- Salt as Required
- 4-5 Cups Water
Instructions
- Rinse and drain dal of choice 3-4 times with water and soak it for 30 mins in water.
- Cut Shavga pods or Drumsticks in pieces of about 1.5” in length and remove its skin.
- In a pot, add drumsticks, little salt and water. On medium heat, boil the drumsticks until they are cooked well.
- While Drumsticks are getting cooked, add soaked dal and 4 cups of water in Instant Pot. Cook the dal for about 20 minutes. Once it is cooked, mash the dal with hand mixer.
- Place a heavy pan on low heat, add ghee until it melts.
- Add mustard seeds, curry leaves, and chopped garlic. Once the seeds begin to pop, add hing and turmeric. Stir well for 30 seconds.
- Add Onions and Tomatoes and let it cook till onions become translucent.
- Add cooked dal, boiled potatoes, and Drumstick pieces to above mixture.
- Let the Drumstick Dal or Soup boil on medium heat for about 5-8 minutes. Adjust the water as per thickness you want for dal.
- Add fresh chopped cilantro.
- Soup is ready. Serve it with hot basmati rice, chapatti or enjoy as soup.
