Guilt Free Rose Cashew Dessert (Gulab Kaju Barfi)
Rose Cashew Barfi or Gulab Kaju Barfi is one of the desserts which is favorite among my family. Gulab means Rose; Kaju means Cashews. In India, you will find different versions of Kaju Barfi, but when you use rose water to flavor this dessert, it is out if this world. This dessert is extremely easy to make and during this cold weather, it provides the energy which body needs.

Cashews strengthen the heart and enhance your memory. They are Ushna (Hot) in nature and kindle the Agni. However, cut back on almonds, cashews, and walnuts during summer to avoid Pitta vitiation. Cashews are packed with iron and copper which work to form hemoglobin and red blood cells; hence cashews are an excellent source to boost Rakta dhatu or Blood as per Ayurveda. The oil expressed from the Cashew nut is an excellent emollient. Almond provides physical and mental strength for the body and offers nourishment during pregnancy and postpartum or anytime of your life, adults, and children. Almonds are nature’s signature brain tonic that provides nutrition to thin sense fibers which arise from the brain and pass through the neck.
Ingredients
- 2 Cup Cashew Powder (Coarsely ground)
- ¼ Cup of Unsweetened Coconut Milk or Almond Milk
- 1/3 Cup Organic Sugar or Sucanat
- 2 Cup Organic Coconut Milk Powder or Organic Cow’s Milk Powder
- 1 to 1.5 Tsp Rose Water
- 1 tsp Cardamom powder
- 1 Tsp Ghee
- Rose Petals and Edible Silver Leaf for garnishing
Instructions
- Melt ghee in a heavy bottom pan. Roast coarse Cashew powder on medium heat till light brown.
- Then add Coconut milk or Almond Milk along with Sugar or Sucanat and mix well. Return the mixture to medium heat again.
- After cooking for 3-5 minutes, add Milk powder.
- Cook it thoroughly by stirring the mixture all the time till the mixture leaves the sides of the pan.
- Add Cardamom powder and rose water and mix it well.
- Remove the mixture it from the heat and spread in a tray with greased parchment paper.
- Garnish with Rose Petals and Edible Silver Leaf.
- Cut in diamond shaped pieces and remove from pan when cool. Store it in container and keep it on kitchen counter.
- Enjoy as desert or snack any time of the day.
