Almond or Badam Pak with Shatavari
Almond Pak is a nutritive dessert especially if you need a good healthy snack which is high in protein. It provides physical and mental strength for the body. It offers a desired nourishment during pregnancy and postpartum for women. Shatavari is said to be one of the most beneficial Ayurvedic herbs and spices of all for females as it is often affectionately referred to as “Woman’s Best Friend” or the “Queen of Herbs.” Shatavari was called upon for treating infertility, both male and female, for regulating ovulation, and easing the common symptoms occurring during menstruation. You can make this recipe with or without Shatavari. After delivery, Almond Pak with Shatavari is given to mother to recover from weakness of childbirth and to promote ‘Manovaha Srotamsi’ (Psychic Channels) in woman and child.

Ingredients
- 1 Cup Almond Powder (Coarsely ground)
- ½ Cup Amaranth Flour or Tapioca Flour
- ½ Cup Ghee
- ¼ Cup of Coconut Milk or Almond Milk
- ½ Cup Fresh Grated Coconut or Desiccated coconut
- ½ Cup Coconut Milk Powder or Cow Milk powder
- 1 tsp Cardamom powder
- ¼ tsp Nutmeg powder
- ½ tsp Saffron
- 2 tsp Shatavari Powder
- Chopped almonds and pistachios for garnishing
Instructions
- Melt ghee in a heavy bottom pan. Roast coarse Almond powder and Amaranth/Tapioca flour on medium heat till light brown.
- Then add all other ingredients, mix well, and return to medium heat again.
- Cook it thoroughly by stirring the mixture all the time till the mixture leaves the sides of the pan.
- Remove from the heat and spread in a greased tray.
- Garnish with chopped almonds and pistachios.
- Cut in diamond shaped pieces. Ease out the pieces when it is cool. Store it in container and keep it on kitchen counter.
