Rice Pudding with Crunchy Fig Topping

This recipe is from Ayurved Sadhana’s Ayurvedic Doula, Ashley Irene. She has been certified in Ayurvedic Doula: Nutrition and Support Program. She has given a twist on regular rice pudding recipe which is available in cooking books by creating crunchy Fig topping to add a little extra flavor and crunch. The word of advice is to make the fig topping fresh to enhance this delicious recipe.

Ingredients - Rice Pudding
- 6 cups water
- 1 cup basmati rice (soaked and rinsed)
- ¼ cup Jaggery
- ¼ cup ghee
- 2 tsp ginger powder
- ⅔ tsp Cinnamon
- Pinch nutmeg
- ½ tsp black pepper
- 1 cup milk
Instructions - Rice Pudding
- Bring water and rice to a boil in a large pot. Simmer stirring occasionally until it begins to thicken. This should take about 20 mins.
- Add the sugar spices and ghee. If pudding is too thick add extra water.
- Continue to cook slowly, stirring as needed.
- When gelatinous consistency, add milk
- Cook for a few more minutes to thicken
- Serve hot and throughout the day
Ingredients - Crunchy Fig Topping (1-2 serving)
- ¼ cup chopped/sliced fig
- 1-2 tbsp ghee
- 1 tbsp Sesame seeds
- 2 tbsp Almonds
- 1 tbsp shredded coconut
Instructions - Crunchy Fig Topping (1-2 serving)
- Heat pan and add ghee
- Add the figs and continue to fry them in the ghee.
- Add the almonds and cook until brown.
- Add sesame seeds and coconut. Once cooked transfer to another bowl or directly to the pudding.
