Ingredients
- 5 Tablespoons Fennel Seeds
- 5 Green Cardamom Pods
- ½ Cup Raisins
- 2 Cups Water for Soaking
- ¼ Cup Organic Sugar or Coconut Sugar or Sugar of your choice
- 1 Teaspoon Lemon Juice
Instructions
- Blending Ingredients:
- In a bowl with 2 cups of hot water, add Fennel Seeds, Cardamom pods, and Raisins and let it soak for 2 hours.
- In the food processor, make a fine paste of all above ingredients along with the water which is used for soaking.
- Strain the mixture using a fine strainer and keep the water aside.
- Preparing the Syrup:
- In a heavy pan, on medium heat, combine sugar and ½ cup of water.
- Once the sugar is completely dissolved, add above filtered water. Stir it well.
- Allow the mixture to simmer until it becomes thick like honey and reduces in volume.
- Once thickened, add lemon juice, and mix well. We add the lemon juice so that the mixture won’t crystalize.
- Then strain the syrup and store it in a glass bottle. Keep in a cool place.
- Serving Fennel Chill:
- To Serve, add 2 tbsp of above concentrated Fennel mixture in the glass and add water.
- Drink it at room temperature or add a couple of ice cubes as needed.
